Summit of Flavors: An Exceptional Sunset at Viñedos La Terquedad with The Lab Kitchen
On December 16th, Viñedos La Terquedad hosted a special evening of wine tasting, food, and more in its vineyards in Querétaro, in collaboration with Tierra Yerma restaurant and the culinary talent of The Lab Kitchen, for a series of special guests.
The menu, created by chefs Omar Valderrama and Christian Becker, was designed with a wide palette of flavors intended to surprise the palates and senses. The food perfectly merged with the beautiful sunset of the Cues area, among complete hectares of nature and hills.
After the attendees briefly toured the lands where the wine tradition intertwines with picturesque landscapes, which were the ideal setting for taking some photographs, our beloved guests enjoyed an exquisite evening of local wine tasting.
Once inside Tierra Yerma, a restaurant nestled in a privileged space with unparalleled views inside Viñedo La Terquedad, the culinary masters of The Lab Kitchen opted to use local ingredients to present a cheese board from the Del Rebaño and Neole regions.
Amidst laughter, great moments, and memories that will last an eternity, a Terco Rosado Syrah 2022 wine was served, as well as a Terco Tempranillo from 2018 and a Terco Merlot 2019, all characterized by their roots in regional wineries that combine traditional techniques with innovation, resulting in wines that capture the unique essence of Querétaro.
For starters, a spectacular thick carpaccio of flambéed salmon with white truffle cream and an activated charcoal meatball stuffed with beef and piquillo peppers, seasoned with basil on eggplant caviar.
For the second course, diners enjoyed a succulent fillet prepared with the finest ingredients from sustainable fishing, accompanied by cauliflower rice and roasted colorful carrots, as well as a short rib cooked at low temperature in Oporto sauce, alongside a sweet potato puree.
To finish with a golden touch, the kitchen wizards served a delicately baked house petit four. With small sweet bites, elegantly decorated and crafted with attention to detail, they amazed with their exquisite presentation and refined flavor.
